No matter how un-basic I try to tell myself I am, the true basic bitch in me goes crazy for anything pumpkin-flavored/scented/themed/etc. And tbh, making these Trader Joe’s pumpkin pancakes on Sunday morning, after a night out, was a serious cure to the Sunday Scaries.
Cozy, comforting and so damn good.
Trader Joe’s Pumpkin Pancakes Recipe
What You Need:
- 1 Cup Trader Joe’s Pumpkin Pancake Mix
- 2 Tablespoons Melted Butter
- 3/4 Cup Milk (I used almond)
- 1 Egg, lightly beaten
What To Do:
- Place cup of pancake mix in a large bowl
- In a separate bowl, combine milk, melted butter and egg and then stir into dry ingredients
- Pour 1/4 cup of the batter into hot, greased pan. When pancakes start to bubble, they are ready to flip
- bonus: I added in dark chocolate flakes into the batter
Top it off with almond butter, maple syrup and chocolate flakes. Or try adding vanilla ice cream for an even sweeter treat.
