Peach Caprese Salad is a summery twist on the classic caprese salad. It’s a very easy and quick recipe, perfect for the person who is kind of lazy in the kitchen but still wants to keep it healthyish (aka me).
What You Will Need:
~ 12-16 small heirloom tomatoes, cut into halves
~ 1/2 cup of fresh basil leaves
~ 1 (8 oz) ball of mozzarella, sliced
1 peach, chopped
about a handful of power greens or spinach (any salad mix you want)
For the dressing:
1 tablespoon of balsamic vinegar
2 tablespoons of olive oil
dash of salt and pepper
Feelin’ Peachy
After you cut your ingredients, add the tomatoes, mozzarella cheese, basil leaves and peaches into a medium/large bowl (with room to mix). In a separate bowl, whisk together the olive oil, vinegar, salt and pepper to make the dressing.
Next, pour the dressing over the salad and mix it all up. I also added in a handful of spring salad, but you can do just basil if you want.
Total time is like 10 minutes and this recipe was good for two people. Peach Caprese Salad makes the perfect summer side dish, appetizer or even a lighter meal. ENJOY!
