Sweet Potato “Toast” Recipe

Sweet Potato Toast

A healthyish alternative to your basic betch avo toast !

What You Need:

1 sweet potato

Toppings:
– avocado
– egg
– bananas
– almond butter
– cinnamon
– red pepper flakes
– sriracha/hot sauce
– feta cheese
– turmeric
and whatever else you would normally put on your toast/want to try

What To Do:

  • preheat the oven to 350 degrees
  • scrub the potato clean, leave the skin
  • trim both ends of the potato and then slice the potato lengthwise into 1/4 inch thick slices
    (it can be hard to get these to be even, clearly mine were not… if you know a good trick for this HMU)
  • bake the sweet potato slices in the oven for 15-25 minutes at 350 degrees or until they are tender, flip them half way

**You can also make these using your toaster, but it helps if you have normal size pieces unlike mine…still good though

Top It Off

After you take them out of the oven, you can add your toppings. Go sweet or savory, it is up to you!

Combo ideas:

  • almond butter + banana slices + cinnamon
  • avocado + scrambled egg + sriracha sauce + red pepper flakes
  • avocado + turmeric  + black pepper
  • avocado + feta cheese crumbles + pepper
  • smoke salmon + capers
  • honey + brie
  • hummus + cucumbers
  • bacon + egg + cheese
  • chicken salad

    The options are truly endless
